Manila owns no water, yet it consumes everything the islands make. The salt, the seaweed, the catch, the cacao: all of it flows into a city that produces none of it, and the people worth knowing here are the ones who can tell you exactly whose it is.

The season opens at those tables. At the roasters and kitchens and bars where provenance isn’t a marketing word. It’s a name, a family, an island.
